Sweet & Sour Salad with Pork

Pork



INGREDIENTS:

10 oz. lean pork (approximately 300 grams)
1 tbsp. soy sauce
3 tbsp. fish sauce
2 tbsp. roast peanuts
2 tbsp. water
1 tsp. ground chili peppers (use more or less to your taste)
¼ cup tamarind juice (may also use vinegar instead)
1/3 cup lime juice
¼ cup fresh green beans
1/3 cup chopped scallions
1 each cucumber (medium size)
1 each red onion (sliced)
3-4 tsp. sugar
1 each tomato (sliced)
1 each napa leaf (peeled from fresh napa)

PREPARATION:

1. Cut the pork into slices of approximately 1 inch each, then marinate with soy sauce for approximately 15 minutes.
2. To make the sauce, mix the water with the tamarind juice, fish sauce, sugar and lime juice and bring to boil in a small pot. Reduce the heat setting to simmer and stir for a few minutes. Then remove from the heat and let cool.
3. Peel the cucumber and cut into thin slices.
4. Place the lean pork into a wok and heat using a medium high setting, stirring for about 5 minutes until tender, then turn off the heat and let it cool for 3 minutes.
5. Add cucumbers, green beans, ground chili peppers, tomatoes, scallions, and red onion slices to the wok, then pour the sauce mix into the wok and stir to mix thoroughly.
6. Slice the napa into several pieces and place onto a platter. Then scoop the food onto the top of the napa and sprinkle with peanuts.
7. Garnish with sweet basil.
