Thai Recipe Chicken and Squash in Pickled Lemon Soup

  • Chicken drumsticks
  • Coriander roots
  • Garlic
  • Squash
  • Pickled lemon
  • Fish sauce
  • Pickled plum
  • Salt
  • Water
  • Pepper



  1. Boil water in a medium-sized stockpot.
  2. Mix garlic, seasoning and coriander roots in the boiling water.
  3. Bring chicken drumsticks to boil for 3 minutes until tender.
  4. Add chunks of squash and wait until it is cooked.
  5. Cut the lemon in half and mix to suit taste.
  6. Take out the lemon from the pot if sourness is suited to the taste.
  7. Remove the seeds of the pickled plum and mash until pulpy.
  8. Add salt, fish sauce and lemon juice to suit taste.
  9. Boil the mixture until green.
  10. Season with pepper and add coriander to suit taste.
