This was tonight’s dinner at my home and was very popular with my husband and daughter. Instead of a boring green salad, this salad offered a slightly spicy taste and was delicious. By the way, I was using cucumbers that I grew in my garden, but you can buy in any groceries store to cook as the same this recipe.
Ingredients:
-3 cups cucumber
-¾ cup cherry tomatoes
-½ cup yard long beans (cut into 1″ lengths)
-3 tbsp. fish sauce
-3 tbsp. tamarind juice
-1 tbsp. palm sugar
-3 each red chili peppers
-4 each garlic cloves (skin peeled and discarded)
Preparation:
1. Pull off the cucumber skin and then shred the cucumber and set aside.
2. Using a mortar and pestle, crush the red chili peppers and garlic cloves together.
3. Add the cucumber, yard long beans, cherry tomatoes, fish sauce, tamarind juice and palm sugar, crushing them together with the mortar and pestle until mixed well.
4. Place on a serving plate and serve.
Makes 3 servings
NOTE: Green beans can be substituted for yard long beans
