Spicy Fresh Bean Salad with Pork

Thai Salad

-7 oz. fresh green beans
-7 oz. lean pork
-2 tbsp. fried sliced shallot
-½ cup sliced red shallot (or red onions)
-1 tbsp. sliced red pepper
-1 tbsp. chopped cilantro
-1 tbsp. chopped scallions
-3 tsp. coarsely ground roasted peanuts
-3 tbsp. brown sugar
-3 tbsp. lime juice
-1 tbsp. roasted chilis
-4 tbsp. tamarind juice (may substitute with vinegar)
-2 tbsp. fish sauce
-3 each eggs

1. Wrap the lean pork with foil and put in a steam cooker for about 30 minutes, then remove and place in a deep bowl.
2. Boil water, then reduce to a medium high heat and add the fresh beans. Cook for 1 minute and empty into a strainer. Immediately pour cold water over the beans in the strainer, then place the beans into the bowl with the pork.
3. Boil the eggs for about 15 minutes and slice.
4. Make sauce by mixing the tamarind juice (or vinegar), lime juice, brown sugar, roasted chilis, fried sliced shallots, and fish sauce to taste.
5. Pour the sauce on the beans and steamed pork.
6. Add sliced red pepper, sliced red shallot, chopped cilantro and chopped scallions into the bowl, and then mix together.
7. Spoon onto a plate, top with the ground roasted peanut and decorate with mint leaves. Serve with sliced eggs.
